Directions
- Preheat the oven to 180c/350f.
- Peel and deseed the pumpkin. Chop 600g of pumpkin flesh into 1-inch squares.
- Bring some water in a saucepan to the boil then simmer the pumpkin for 20 minutes.
- Meanwhile, roll out your pastry to fit a 24cm tart tin.
- Grease the tin and line with the pastry. Prick with a folk and fill with baking beans.
- Pre-bake the pastry for 20 minutes.
- When the pumpkin is done, drain as much water from the pumpkin as you can then blitz into a puree.
- Mix in the sugar, mixed spice, egg and butter.
- When the pastry has finished pre-baking, remove the baking beans and fill with the pumpkin filling.
- Bake in the oven for 40 minutes, until the filling has risen and the pastry is golden.
- Leave to cool then sprinkle with icing sugar and enjoy.
