Directions
- Pre-heat the oven to 200c / 390f.
- Take the baking potatoes then slice downwards into each potato. Make each incision 1/2 cm apart, being sure not to slice all the way to the bottom of the potato.
- Place the potatoes into a baking tin lined with greaseproof or parchment paper.
- Melt the butter in the microwave or on the stove and brush it over the potatoes.
- Bake for 45 minutes.
- Meanwhile, finely chop the garlic and chop the bacon. Add to a bowl along with the cheese then mix.
- After 45 minutes, remove the hasselback potatoes from the oven and brush over another layer of hot butter.
- Top the potatoes with the cheesy bacon mixture and return to the oven for 15 minutes.
- Serve topped with sour cream and finely chopped spring onions, and enjoy.
